This ancestral “Dorado” brings us the finest example of an oxidised Rueda wine. After the Verdejo base wine has been created, it is fortified and then starts an oxidative ageing process in open-air demijohns for a year. Following this, It is aged in barrels with the mother yeasts which have been preserved, vintage after vintage, in a system of soleras of over 70 years of age.
