CABERNET SAUVIGNON
There is no denying that Cabernet Sauvignon is one of the world’s greatest red wine varietals.
Born in France but now grown all over the planet, this grape variety goes into the majority of the wines produced in one of the world’s most prestigious wine regions: Bordeaux.
In this part of the world, it is almost always blended with other varietals but, in the rest of the world, it usually comes as a single varietal.
Its ability to adapt has brought us an array of wines with a special character. The winemaking techniques used to produce the wines will vary according to the place where the grape is grown. A Cabernet from a cold climate is not the same as a Cabernet from a warm climate, because the grapes' level of maturity is very important when it comes to creating the wine.
Intense in colour, Cabernets produced in a warmer climate possess aromatic notes that tend to include green pepper. On the other hand, if the Cabernet comes from a cooler climate, we will find aromas of black fruit (blackberries, blueberries, etc.) or red fruit (ripe strawberries and redcurrants). Aromas of laurel, rosemary, thyme and oregano are also typically found in this varietal.
Cabernet has given many wine lovers great drinking pleasure over the years and, although many think it is now out of fashion, some of the most prestigious wines in the world have been, and continue to be, produced from it.
